I will be purchasing MINI fare tickets for the Venice to Florence Frecciargento. Which is advisable -- ticketless either with payment receipt via e-mail or ticketless with payment receipt on board, or printing out tickets at the station (if that option is available)?

I did the ticketless with receipt via email. All you need is the PNR code from your receipt and proper identification and the staff on board will check your PNR and identification against their manifest and issue your ticket on board. If you lose or forget your PNR, you will have to buy another ticket. So, I have printed out my receipt as well as saved the .pdf as a word document on my Blackberry as a backup.
