I was resarching rates on their site and there was a rate for the Florence-Paris night train which was a good rate called GO and a 15% off from Venice-florence....I was wondering are there any reasons I would not be able to book these rates

If you succeed in booking tickets on the Trenitalia site, you certainly can get these rates (if available). If they aren't already sold out for your travel date, both the Smart Price fare and the Moove fare are cheaper than the Go fare for the Florence-Paris night train. The Smart Price is the cheapest of all.

As Tim says, go for it. Trenitalia doesn't seem to accept credit cards from the USA so we can't buy online. However, I have read that some travelers with Canadian credit cards may be getting through. Try it and see. You will have to register with Trenitalia as well as registering your credit card with either the Verified by Visa program or the Mastercard equivalent. Its an extra security step.

thanks I will have to give it a try when my route comes up for sale. I am registered with verified with visa as well so lets hope it works.
