Anyone with ideas on the best places to stop between going from Paris towards the Cinque Terra?

Yes, on the destination end, don't assume you can park in the CT in the summer, esp. on a weekend, unless you have made firm arrangements with the owner of the property you're staying at to provide overnight parking for your card.
Before getting to CT, you can stop in Provence if you have time, and also in the Riviera if you have time. Car is an advantage in Provence to explore outside the big cities, car is a disadvantage in Riviera where rail connects most (but not all) things.
Focus on overnight parking, every night you should have definite arrangements for secure overnight parking. If you do not, could be a problem.
