Our party of four will travel from Amsterdam to Copenhagen mid-July. We will not have a car and are wondering if trains or planes (what airline?) would be our best bet.

By train it is an 11 hour journey with two changes. But there is a direct overnight train that leaves Amsterdam at 7pm and arrives at 10am. Your party can buy a four person couchette for 236 euros total (advance fare). Both www.sterling.dk and transavia.com are discount airlines that have direct flights; flight time about 90 minutes.
