I accidentally booked the wrong date (May 9th instead of May 8th) on 4 Super Economy tickets for the high speed from Venice to Rome. I've spent the past couple hours searching the sight to find out how to change it. It appears that a Super Economy is not change-able? Or refundable/re-bookable? Am I just out of luck?

Pretty much. On the other hand, if you just go with it, you get an extra day in Venice.
Deutsche Bahn lets you refund their Sparpreiss tickets for a 17.50 euro service fee, which I had to do once for the same reason as yours.
Unfortunately, those tickets are indeed not changeable or refundable - that's why they're cheap.
Airplane tickets in the US are now required to have a 24 hour "grace" period, when you can get the tickets canceled and get a refund. These train tickets, alas, don't work that way.
Just like you and Sam, I've made a similar mistake - just chalk it up to the cost of travel. Or, as Sam says, make lemonade out of the lemon, and say an extra day in Venice!

As the others have mentioned, Super Economy tickets are non-changeable and non-refundable, so you're out of luck. Although May is not far off, you might check to see if there are any economy tickets left on the route you'll be travelling.
The other thing you could do is check the prices on Italo Treno to see if they have any deals happening at the moment. Note that the station they use in Rome may not be Roma Termini on all trains. Both rail networks use Venezia Santa Lucia.
You can purchase tickets for both Trenitalia and Italo using the www.captaintrain.com website, at the same prices as charged by the rail operators.
Yep !! Either sell the tickets to someone else or use them. If you had spend anytime following rail discussions in Italy you would have read that SE ticket are no refund, no change. Fortunately, the expense should not have been that high that it would represent a major lost. For the record - Economy tickets can be changed one time paying the difference, if any, and Base tickets can be changed anytime and as many times as necessary.
