I would like some info on the best way to travel from Amsterdam to France (Paris) and then through the south of France. Train and car? Also from there to Italy...would like some ideas.

Easiest way to get from Amsterdam to Paris is on the Thalys high-speed train:
I would agree with Tom on the Thalys train. From Paris, you can either take the train or rent a car. Either would work but if you have the time, the flexibility of a car would be great. Just be sure to turn the car in at Nice before crossing into Italy. The costs are higher for dropping off in another country. From Nice Ville, you can easily take the train into Italy. It's 5.5hrs to the CT from Nice on the train.
