Hi Harry. Amsterdam to Vienna would be a very long train ride; try skyscanner.com for flight alternatives. For the second trip, trains make sense. See bahn.de for train schedules.
Harry, If you check the budget airlines, you'll probably find that KLM and Austrian Air have direct flights from AMS to VIE, while Vueling and others offer indirect flights. However, the tickets will probably be a bit pricey. Travel by train on that route will be about 12 hours, which is a bit "lengthy". One option that I'd probably consider in the same circumstances is to change the order of the Itinerary and travel Amsterdam - Alsace - Vienna - Amsterdam. That would break the long rail trips into more manageable segments of about 6 - 8 hours each. Travel by air from Vienna to Amsterdam would be the quickest and easiest solution. If you have the time to travel by train, one method I often use is to stop for perhaps one night at an intermediate stop. On the way back to Amsterdam, you could (for example) stop at Nürnberg for one night as that would make each rail segment easier. Good luck with your planning!
For Amsterdam to Vienna the fastest daytime route (11 hours) is Amsterdam-Frankfurt Flughafen (airport)-Vienna, departing at 08:04 and arriving at 19:04. If you wish to travel overnight, you have two choices: 1. Amsterdam-Frankfurt Flughafen on an ICE train and Frankfurt Flughafen-Vienna on a EuroNight train. Depart at 18:34 and arrive at 08:56. 2. Amsterdam-Munich on a CNL night train and Munich-Vienna on a Railjet train. Depart at 20:31 and arrive at 11:24.
