We're thinking of taking the train from Stasberg to Paris on New Year's Day...is there any reason that the trains wouldn't be running on that day?

Well the first and often the second of January are public holidays in most countries, so the train services will be reduced to a Sunday schedule.Other than that you should be fine.

You can find schedules on the Bahn website, but it's too early for Jan 1. It might help if you spell it Strasbourg.
