when using train in italy does the conductor announce each stop prior to the stop?

As I recall, no. You'll have to be on the lookout for the station signs as the train slows and/or estimate based on the published schedule.

Depends on the grade of train. You can forget that on most Regionale trains, many premium trains have automatic announcements.
