we want to take the TGV to Bordeaux and continue on immediately to Sarlat by train. How do I know that the train to Sarlat leaves from the same station St. Jean Gare that we came in on--or is there only one station in Bordeaux?

That's right: Gare St. Jean is the one and only station in Bordeaux, so there's no way to miss the train to Sarlat. You're smart to check, though, since I know more than a few people who have been tripped up by towns having multiple train stations.
