According to the Bahn schedule website, if you leave on the bus from the Hohenschwangau bus stop at 15:42 (3:42 PM), you'll get back to the Munich Hbf at 18:05 (6:05 PM). If that's not early enough, leave Hohenschwangau at 14:41 (2:41 PM) and get back to Munich at 17:05 (5:05 PM). If you have a 1 PM tour of the castle, that should be enough time (1h40m) to get back to the bus stop by 14:41, but you might want to schedule a tour earlier than that to make sure. If you want to use a Bayern-Ticket (the least expensive fare) on a workday, purchase an MVV 3 zone ticket (7,80€) and a Bayern-Ticket (1 pers, 22€). Leave on the 8:52 RE. That train gets to Geltendorf at 9:21. Don't change trains at Geltendorf; just use the Bayern-Ticket from then on. Get off at Buchloe at 9:40 and take another RE at 9:47 to Füssen at 10:55, then the bus at 11:05 from Füssen to Hohenschwangau at 11:13. It only takes a few minutes to walk from the bus stop to the ticket kiosk. You need to pick up your ticket an hour before tour time, so arrange a tour between 12:30 and 1:00 PM.

Trains leave from Fussen to Munich every hour. It's about a two hour trip. You can leave as late as 4pm from Fussen and be back by 6pm.
