train madrid to paris

In july we are staying a week in Madrid and a week in paris. We want to take the train from Madrid to Paris and stop somewhere in between for one night. Where should we stop that would be convenient and a nice place to spend the day and evening?

Thanks I know about the night train but we want a stopover and we like watching the scenery on the train. I'm just not sure what would make a nice place to stopover.
