I understand there are two daily train departures from FCO to Venice. How do I get from the terminal (arriving from Dublin) to the train?

Am not sure that is accurate. There are two trains to Florence. You walk. Just follow the signs to the station. It is well marked.
Actually, there are two direct trains to Venice on the Trenitalia schedule for tomorrow.
Frecciarossa 8431 departs at 11:08, and Frecciarossa 8445 departs at 15:08. Each one takes about 4.5 hours to get to Venice.

It would be nice to catch one of those two daily direct trains, but I wouldn't bet on it, unless your flight arrives at FCO at the perfect time. Otherwise, it will most likely be faster to catch the next train from the airport to Rome Termini and from there catch the next train north to Venice. That is, if the next direct train to Venice doesn't depart for three hours upon your arrival at FCO, you'll get to Venice an hour or two faster by catching a connecting train in Rome to Venice.
As for getting to the train, I have no experience with FCO, but I am sure that in the Arrivals area (after baggage claim and walking through the green Customs door), there will be signs directing you to the Ferrovia, probably with pictures of a locomotive.
