When checking train ticket prices there is a fare called Discovery Senior. Is this for US. citizens as well and do you have to show proof of age 60 or over?
Yes, the 25% discounted fare is for everyone 60+. There is a second fare 50% off, but you need to buy an annual card for that. If you've made it to 60+, the first fare is for you. I bought my first discounted ticket on my 60th birthday, to Chantilly for the day, and did show proof of age buying it at the ticket window. The train conductor may ask you for proof if you buy on line.

If you book tickets well in advance (up to three months allowed) on tgv-europe.com, you can get discount fares for persons of all ages that are even cheaper than the Discovery Senior fares. Those tickets are for a specific departure date and time and are non-exchangeable and non-refundable. Be sure you can commit before booking. This doesn't apply to tickets for regional trains. There are no discount fares on them, no matter when you buy them.
Tim is correct that regional trains don't offer prems fares, discounted early bird fares, but they do reduce the fare by 25% for seniors, 60+.
Bets, I just checked on fares for regional trains from Marseille to Nice. There was a Discovery Senior fare offered on regional trains that required a connection in Toulon. There also was one for one departure time on a direct regional train, but not on another one. Might there be an allotted number of seats at the Discovery Senior fare for each departure time?

Yes they are, I just remembered they are outside rush hour. Ie, we use them to go up to Paris for the day from the family house on the 9 am train but not the 8, and take the 19h train back but not the 18h. I don't think there is a numeric allotment, as with the prems fare, however. Sorry, having a senior moment about the rush hour exclusion.
