When traveling with train in Italy, how long prior to the departure time do you have to be at the station? Is there any check in requirements like airlines do? Any security lines?
Well, I am specifically talking about Termini station in Rome.
"Check in" for a regular train pretty much happens after departure, when the conductor comes through. Have your ticket or pass ready; if you reserved a seat or couchette have that card out too (it will also tell which carriage (carroza) and seat you belong in. No security lines.
Be at the station 10-15 minutes before departure time, just to get situated aboard before the train pulls out. Find your train on the big board when you enter; it will show destination, which platform and when it leaves.
Termini station has lots of places to get supplies for your journey, including a substantial grocery store on the lower level near the far left (as you face the tracks) escalators. Buon viaggio!

Get to the right platform shortly before your scheduled train. There aren't security checks or a check in as such. I've never checked luggage on a train so don't know about that.
Your ticket needs to be validated before the conductor checks your ticket. If you are on a railpass you need to sign and date to validate. If you use a ticket, just find the place to "punch" your ticket so it's valid.
In Germany, each train car has a card at each entrance that shows whether it's a first or second class car and the car's destination, it will also show if any seats are reserved and what portion of the trip they are reserved for.
I can't recall if it's the same in Italy, I've only taken milk run trains there.
I double check to make sure I'm validated, on the right train and the right class, not in a reserved seat (unless it's your reserved seat), then just relax and enjoy the ride.
On the train is a good time to review the sites you want to see at your next stop.
