Tracking flights? and a points question

I have never tracked flights. While not being careless about money, I also found the fares to London to be within a couple hundred dollars of what I'd expect. That said, I think I had better start tracking. Other than Google Flights, what sites are good for tracking flights?
And can someone please explain: Why are there only a limited amount of flights purchasable by points on flights? Is the number of those reward seats likely to change at any time?

There are only a limited number of rewards seats on flights because such seats do not generate cash. Generally the number of reward seats is not likely to be increased. I guess it could happen because all things are possible but do not plan on it. Some airlines do not limit the number of reward tickets on a flight rather, they limit the number that can be purchased for the lowest number of miles. On those airlines, the seats that require a huge number of miles are always available.

I'm flying from Istanbul on a one-way Turkish Airlines ticket to Washington-DuIles in a couple of weeks. It's a non-stop flight. I purchased the ticket about 2 weeks ago, and there has been consistent availability two weeks or so before departure at between $600 and $700, which I consider a good deal for a one-way ticket; it seems as if the flights aren't particularly full. I checked several times on the United website for frequent-flier tickets, but there was nothing available on the non-stop flights (of which there are two per day) at any mileage level.
