Time to change trains

I'm on RailEurope.com trying to buy tickets for train travel throughout Europe and in some cases I don't have much time to catch a connecting train... 10 minutes at Rotterdam CS and only 7 minutes at Firenze S M N. I'm not sure how big/ easy to navigate the stations are. Am I crazy to think this itinerary is do-able?

Firenze SMN is a realtively small train station; as long as you know your platform # you should be able to make it in 7 minutes.

10 minutes is more than enough time to connect in Rotterdam.

And ditto, don't use RailEurope. Use the national rail websites.

A lot depends on you. If you are out of your seat and at the end of the car when the train stops, you should have enough time to make the connection. The people on the platform will usually let everyone in the car off before they start to get on. (They really have no choice). If you sit in your seat until the train stops and then try to get out you will probably be like a salmon swimming upstream, against the flow of passengers coming into the car. Then you will have a problem.

Know where you are going. German Rail lists the platform number for almost every train. Locate the stairs to the tunnel and follow the flow to the next platform.
