Departing last week of June, returning mid July.
A few days ago I saw fares nonstop from around $1200, now it's gone up to $1400+....in 2007 I went to Paris from SFO for UNDER $700...it was a deal for sure, only one connection in NYC. I think I got that ticket in March or April...fairly late. To wait or not? Is it too late to get a non stop?? Most of the fares I saw recently have 1+ connections.

it looks like you can get non stop flights from SFo to CDG but they will cost more than 1 stop flights prices are high for travel to Europe and nobody knows if prices will come down or will go higher fuel prices are high and airlines probably won't prices unless the demand is very low it's a roll of the dice, you want to travel during high season you may have to bite the bullet and pay more prices may go down but they could go higher also the longer you wait to book the more limited seat selection you have
remember a important rule of travel, once you do book your airfare do not look back
