As I recall, in most airports there is a separate RyanAir desk, not check-in, where you go and present your documents. It should be reasonably well marked. I do not recall though if you are checking a bag and have to go to check-in, they may take care of it there.
I had read a ton about people messing this stamp issue up when we were flying RyanAir out of Barcelona. So we arrived prepared and I still had a hard time figuring it out. It’s really an I.D check that Ryan Air requires for non-EU passport holders, although I didn’t really understand that a few years ago. At any rate, we arrived at the Barcelona airport and I knew we needed that stamp on our boarding passes. But I couldn’t find anywhere to get it done.
I could not find anyone to answer my questions about where to go either. We stood in the bag check line for awhile even though we had no bags to check.
The line was enormous. In frustration, I left my partner in line and started wandering around for other plans. At some point, I saw that there was a Ryan Air ticket purchase window that was staffed. As I approached to ask questions I saw a small, hand-written sign that said that non-EU ID checks were at the window as well. She checked our passports and stamped them.
So perhaps the ticket sales window will work for you as well.
Somebody may have more recent or specific memories of this than I... We went out of Dublin on Ryanair a few years back and needed the stamp. We did, however, have bags to check so it made the process very easy. The check either happened right at the check in/baggage drop desk with the same agent or maybe she referred us to a podium right next to that to get the stamp (I'm vaguely remembering that). It was such a non-issue that it made no lasting impression. At our hour of the morning we didn't have any lines for check in, it may have been their first flight of the day. I guess if you otherwise have no need to speak with an agent (no bags to check, boarding passes already printed) and there is a long line at check in, I would suggest taking a quick walk around the area surrounding the check in desk to see if you spot a separate stamping area, or if you can flag down any agent walking around the lobby to get some direction.
