I'm flying into Heathrow because it's a non-stop flight, but then need to get to Gatwick the same day, and vice versa on the way home. What's worked best for any of you?

I did National Express, also. A round trip ticket is just barely more than a one-way. Book it just like an airline ticket for your two dates of travel. I arrived to the bus terminal earlier than I thought I would, but they let me go ahead and go on the earlier bus.
