We took the night train from Rome to Nice two years ago -- couchettes -- prices have changed but the upside was that it was an easy trip, left about 11pm and arrived Nice about 8 the next morning. But, if you are staying in Nice, you won't be able to check in until later in the day. If you go, get up around 6 and stand in the aisle and watch the Mediterranean go by. The downside is that you go through some beautiful country, in the dark of night. If you have already seen it, you won't miss it...

I don't think that the night train mentioned above exists anymore. You can get a night train segment from Rome to Genoa that departs at 23:50 and arrives at 6:11. You won't get much sleep and you are still 4hrs away from Nice. A regular day train run takes 8.0hrs-12.0hrs depending on which run you choose.

www.blu-express.com, a budget airline, flies from Rome to Nice.
