Rome and Florence

If we wanted to do both cities in 7 nights, what would be the best way? Can you open jaw, going to Florence, leaving from Rome? Or does it have to be round trip from Rome?

Yes you can.
However it may matter to you that there are no direct flights from the USA to Florence.
You would have to connect somewhere in Europe.
So I would prefer to fly into Rome and out of Florence.

Where are you flying from? That will determine your options.

For some months of the year, American will be flying nonstop from Philadelphia to Bologna (an easy trip to Florence). Otherwise, you have to connect to get to Florence, Bologna, or Pisa airports from the US. Rome gets nonstop flights year round from some US cities. If you have to connect to get to Rome anyway (say, if you're coming from San Francisco or Seattle), you should check which is the best option.

When checking, remember that you will not want to buy any advance discount train tickets on the day of your arrival, since you don't know when your flight will arrive and how long it will take to get through immigration and baggage claim. So, if figuring costs and time, be sure to add the cost of a full price ticket on the train from Rome Fiumicino airport to Florence. Last I looked, there were two trains a day that went right from the airport to Florence without needing to change. The other runs will require a change in either Rome Termini or Rome Tiburtina stations.

To find open jaw flights, use the "multi city" or "multiple destinations" option on Kayak, Google Flights, or airline websites. Note that this is sometimes hidden (on United's site, you have to find, then click, "Advanced Search").
