David, you can get all the details of any Trenitalia train without a map. On the Trenitalia site, after you request information about trains for a specific date and destination, a list of trains or combination of trains will appear. Choose one of them by clicking on the far right column. You then get a bit more information about that choice (type of train, available refreshment car, etc.). On the far right, again click for more information and you will get a list of all intermediate stops. Hope this helps.

For the quick answer, there are about 55 trains a day that run from Rome to Florence. Most are high-speed non-stops. However, if you want to stop at Orvietto or Chiusi, you need to carefully pick the run and train types that will stop there. The high-speeds (Eurostar Alto Velocita) from Florence to Milan will usually make one stop at Bologna. That's it. Again, you can take an IC train that will make more stops but the journey time will double. There may be an overall train map on the Trenitalia website somewhere but I've never seen one.
