I purchased a ticket on Rail Europe web site for a trip from Paris Gare Lyon to Lausanne some time ago. I'm about ready to use this and realized what I have is a "receipt" for a ticket purchased, including Reference Number, Coach Number and Seat Number, but the document doesn't look like a "ticket". I've shown the document to staff at the Gare Carentan, and the attendant said, in so many words, " he'd never seen anything like it before, and I should just try to use it like a ticket". Are my wife and I going to be thrown off a speeding train?

Surely you are in the best position to answer that. You have the bit of paper and you are in France. Go into a SNCF Boutique - they are all over the country - sit down at the nice chair and explain your problem to the nice lady (or I have actually seen one man) behind the desk and show them your bit of paper. The sooner the better.
