This is our first trip to Paris (feeling a little intimated by the language barrier). I would like to know if it is advisable to take a day trip by train (or some other method) to Provins. thx

Don't worry about language as most people in France speak excellent English especially in tourist areas. Relax.

The trains to Provins leave from Gare de l'Est about every hour. It's a suburban service, so no discount for buying tickets in advance. Takes about 90 minutes.

Both the trains from Gare de l'Est to Provins and from Provins to Gare de l'Est depart at 45 minutes past the hour. The fare each way is €10.50.
