I am going to giverny/vernon and fontainebleau on two consecutive days. Will the paris visite card for two days be the cheapest way to go by train to these destinations or is there another that I am not aware of?

The Paris Visite is for use in the city of Paris only unless you have buy the one for Zones 1 - 6, which allows you to travel to and from the airports.
The Fontainebleau-Avon station is in zone 6. A zone 1-6 Paris Visite pass will cover both your train ride from Gare de Lyon to Fontainebleau-Avon and the bus ride from there to the chateau. If you were to buy an individual ticket, it would cost 7.90 EUR each way and the bus ride would be extra.
The Paris Visite pass is not good for the ride to Vernon because you will be traveling beyond zone 6. The fare is 12.50 EUR each way.
