I'm wondering if anyone can give me any suggestions on how best to travel from Paris to Oloron Ste. Marie (and back) and how long I should set aside for the journey and back.

Take a TGV from Paris to Pau and a regional train from there to Oloron Ste Marie. Depending upon the time of departure, the trip will take 6 - 6 1/2 hours. See the timetables at www.bahn.de. After you get summary timetables for Paris-Oloron Ste Marie, click on the arrow to the left of each route to see the connecting points.
