I feel like I am missing something... In the RS book it says you can get from Paris to Amsterdam in 3.5 hrs, however the Bahn schedules show the fastest I can get there is a little over 5 hours.

Are you looking for a trip that departs more than 3 months from now? I don't think you can buy more than 90 days out (but not sure about this). Try looking at a date in the next month. The Thalys train does run in about that time.
This would be the Thalys high speed train that leaves from Paris Nord station. Here is a link to their website for your perusal. I took it back in 2005,, great way to travel. If you have a pass that includes both France and the Benelux countries, you can buy a passholder fare ticket (not a simple seat reservation) on Thalys trains for €39.00. If you book a point-to-point ticket well in advance, you can get a Smoove fare as low as €35.00. The standard 2nd class fare is €130.00.
