I'm arriving from London via the Chunnel to the Paris Nord station and continuing on my journey to Germany. All of the trains leave from Paris East which I'm understanding is right next to the Nord station. Is 1 hour between trains enough time to get between stations or do I need more time. I come in at 11:53am and I'm looking at a train that leaves Paris East at 12:55. Is that enough time??
That's plenty of time. Even with the time it takes to get oriented, it's a short walk of a couple of blocks.
More or less about 8 minutes on foot shorter if you take a taxi

I am not gonna be one of those people to tell you it is referred to as the Eurostar, not the Chunnel. Oops, I just did:) Now that you're hangin' with the cool kids, you gotta get the lingo.
There is a Metro connection between Nord and Est, but by the time you walk down the tunnel to the station, buy a 1.90 EUR ticket, get on the No 4 train, blink and get off at the next stop, then walk the tunnel to the Est platforms, I think walking would be the same. Plus you got a few stairways to deal with and the turnstile, all with luggage. Only do it if it is pouring rain outside.
Obviously it takes longer than eight minutes if you've never been there before and have to figure out which way to go etc.
But yes an hour is plenty of time, as Bets said, even counting the time needed to get oriented and headed off in the right direction.
Why don't you "walk" the route on google Street view to get a feel for it, which buildings you'll be looking for as you exit Gare du Nord, in which direction you'll walk, etc?

You're taking the route I usually take from Paris Nord to Est to catch the ICE or TGV to Frankfurt. Getting from Paris Nord to Est, you'll see signs pointing the way. It's ca. a ten minute walk as you exit Nord, turn left to the end of the block, where there is a traffic light. Half way across the street is the Albert i hotel. When you're across the street, it's BMW repair shop, go left, then right. You'll see the steep stair case
If you want to avoid the stairs, you can walk straight out of Gare du Nord and down Blvd. Denain to to Blvd. de Magenta. (The next corner.) Turn left and walk to the next big intersection. You will take a quick left (There will be sign pointing the way) and then a quick right on Rue de Mai 8. One more block and come to Gare de L'est. I second the motion of looking on Google street view to see the route.
Good luck taking a taxi. I doubt you'll find one that will want to take you that short a distance unless you flash cash. Serously, if you really want to take a taxi, be prepared for them to say no. Flash a ten Euro note and he may take you--off the meter. Not legal but the realities of travel. However, traffic is so bad around these two stations that it might actually take you longer than just walking.
You can take the metro. But it total time walking to the metro, waiting for the train, and the journey will probably take longer than just walking between stations.
One hour should be enough time as long a the Eurostar isn't late.
FYI--the signs pointing the way will say Gare de L'est. (Not East.)
