I was wondering if anyone knew whether or not reservations must be made in advance for the Paris to Nice train. And if so, how far in advance would it be necessary?

Do you have a railpass? Will you be in Paris a few days before taking a TGV to Nice? If the answer to both questions is "yes," then you can buy your seat reservation when you get to Paris. Hote, however, that SNCF limits the number of seats it allocates for passholders. And if you're traveling in August when many people in France go on vacation, then it might be a good idea to buy your seat reservation before you leave home. TGVs to the south of France can sell out in August.
If you simply wish to book a ticket (seat reservation included), then doing so well in advance online can get you a discount fare. If you want to know more about how to get the best fare, just ask.
