I noticed that my train makes a stop in Lille, however it is not a connection. We have considered getting off the train and seeing the Cathedral and enjoying lunch. Is it possible to do this and catch a later train to Bruges? We have a global rail pass if that helps anyone. If this route requires a reservation (Epernay>Paris>brussels>Bruges) which we believe it does, will this trow us off and have to purchase another?

Trains from Lille to Bruges are regional trains and/or IC trains. No reservations are possible. If you get off in Lille, you can certainly hop on a later train. However, I'm confused about the route you gave. You don't need to go to Brussels on the way from Lille to Bruges.
