Overnight train questions

In June I will be traveling with my sister and 12 yo niece. It will be their first trip to Europe. They saw the RS program where he takes the night train and decided that they wanted to overnight on a train. So I've booked us on the night train from Paris to Munich. We're in a three bunk sleeper car. It leaves at 22:45, so what time should we be at the station? I would prefer to board early and get settled, since the train leaves after the kid's bedtime. Alos can we use the WC on train while in the station. Also we'll need to leave the luggage somewhere that day. We're staying in an apartment in Paris, so we can't leave it at the hotel. We're leaving from Gare de l'Est. Are there left luggage facilities? How's the neighborhood around the station? Are there are good places for dinner near by? Are there any extra safety precautions we need to take? I took a night train in England 20 years ago and it wasn't a bad experience, but my husband didn't enjoy it all. He kept waking up every time the train stopped, which was a lot, and he was really too tall for the bunk. I'm hoping that my sister and niece have a better time. I know that I'm trying to pin down every detail, but I really want their 1st trip to Europe to go smoothly. Thanks
