We are planning our first trip to Europe and want to fly from New Orleans to Paris and return Rome to New Orleans. Do we have to book open jaw through a travel agent? Does flying open jaw trigger more security inspections because you are going through different airports?
No, you definitely don't have to book open-jaw through a travel agent and it doesn't trigger more security inspections.
Most airfare sites have multi-city, one-way and round trip to search for fares--multi-city is the one you'd want.
We have made 2 open jaw trips to Europe in the last 6 months (Columbus-Amsterdam,Paris-Columbus and Columbus-Rome,Venice-Columbus) and in both cases the price difference was slight and well worth the convenience. We priced it out on the multi city option of the large travel engines then bought our tickets directly from the airlines. We went through security at each airport as usual...don't know what other kinds of problems you might anticipate but we encountered none.
First use the search box for Open Jaws and you will find an extensive discussion of this subject. Second, an multi-city ticket (open jaws) is the same as any other round trip ticket.

NO, you certainly don't have to use a Travel Agent to book open jaw flights. Most airline web sites have a box for "Multiple Flights" or wording similar to that, so just check that box and another menu will appear. I use open-jaw flights on every trip to Europe!
Rick recommends using a Travel Agent for intercontinental flights in his books and I also use the same method, albeit for slightly different reasons. I've found in the past that the T.A. can often find me slightly better routing or times than I've been able to find in a reasonable time on the internet. Also, these more expensive tickets are covered by a Travel Assurance Fund here if purchased through a T.A. (anyone remember Canada 3000, Zoom or others?), so I can get a refund if necessary.

Thanks for the info. As a result, I have booked our flights. We did change our minds about Rome and decided to fly back from Milano.
Some travelers are confused by open jaw. It is a term that describes flying into one city and home out of another. All airlines book them. All you do is tell the agent your destination and departure cities. You dont even have to mention open jaw. Simple.
On our recent trip to Italy we flew open jaw on Delta and once there decided to add another week to our trip. We paid the extra bucks (anticipated)for changing the date but were not able to change the departure city, period. Maybe some open jaws allow for that change and some don't so learn the rules of your fare if this may become an issue.
Changing the return date on a ticket is one thing, trying to change the city you are flying out of will require a full reissue of the ticket - even if this was a fully refundable ticket.
