going from Amsterdam to Paris also to Munich from one of those citys. dont know the order yet. anyway do we just get a one way pass or get a 5 day eurorail pass?

I presume you mean one-way ticket rather than one-way pass.
If you book well in advance, you can get discount fares for point-to-point tickets on those routes. That will be much cheaper than any pass. In fact, for your limited trips standard fare P2P tickets may be less than a pass.
You can book up to 90 days in advance, but you have to pick the right Web sites to get the best fares. When will you be in Europe?

If you go from Amsterdam to Paris via Thalys they have big passholder "reservation" fees. You can probably get advance purchase tickets online from the Thalys website for about the same cost as a day of your railpass plus the passholder fee.
For the trip to Munich, there are discounted tickets from German Rail that might be less than a day of your pass. Some of these fares are as low as €39 pP. You can find them under "Savings fares" on the German Rail website.
These discounted fares are like flight reservations, date and train specific and only limitedly refundable. You book them a least three days in advance, online, using your credit card, which you must have with you when you use the ticket for identificaton, and they email you the ticket as a pdf file that you print out. In addition to the discounted fares, you get seat reservations at about half price. Like airfares, the lowest fares sell out, so it pays to book as soon as you can commit.
