Where do I find night train information. What cities offer night train connections? Prices, schedules etc

Where do you wish to travel? In addition to the City Night Line, Italy, France, Spain all have night trains.
I don't know where you can catch them. My kids have Eurail passes and want to possibly go to Spain from Germany or Portugal to Italy or Italy to Prague or Switzerland to Prague

You asked an extremely vague question. Then, you added more detail that completely changed the information needed to respond.
In your original post, you didn't reveal that you are a mother asking on behalf of your children.
For someone doing their own research, I would have recommended seat61.com. For grown-ups depending on their mothers to plan their travel, I would recommend organized tours.
If your children are going to be traveling by night trains, they should not asking their mother to do the research...
I don't mean to be snarky, but traveling by night trains in Europe requires solid independent traveling skills. If your kids are relying on you to do their homework, they won't be very well prepared when things go wrong. Seriously, this is not Disneyland. If your kids can't handle their own train plans, they have no business being on their own in Europe.
Until they can do their own research, they should go on an organized tour. I hear good things about Contiki.

Those are not cities that they would be traveling between but BIG countries. Just where in Spain to just where in Germany to where in Italy. You cannot expect anyone to provide a decent answer when this isn't z decent question.

I have several suggestions for you.
Go to the seat61.com site recommended by Doug and read the railpasses section there.
Click on the Railpasses tab at the top of the page you're reading now and read everything you find there.
Go to this page on the Euraide site and read everything it says about night trains. You'll be able to clink on links to get further details about specific night train routes.
Take advantage of the detailed timetables for virtually all of Europe available on the German Rail site. Enter a departure point and an arrival point. After you get summary timetables, click on the arrow to the left of each departure time to see the connecting points, if any. Getting from point A to point B might require several connections, one or more of which could include a night train. The type of train in service for each leg will be identified. Look for CNL (City Night Line) or EN (EuroNight). There are others, too.
