So I was able to book my Venice to Florence leg, but am still waiting for the website to travel to La Spezia. I'm trying to go there from Florence, and then leave there to Rome. The varied options you see prior to the June 8th turnover date does not pop up (there are just so much more options when traveling prior to June 8th). Will I just need to wait a bit longer for that part of the website to get up-dated? Am I doing something wrong?

There are still some trains that have not been released yet. BUT, there are lots of regional trains (2 per hour on average) between Florence and La Spezia. Some are direct and do the run as fast as the "fast" trains, which are all connections at Pisa from a Florence regional. So you do not need an advance reservation on the regional train. Just buy the ticket in Florence and board early to get a nice seat.
