Your simplest option is to buy two Oyster cards at Heathrow, load each one with about 20 GBP, and use them as pay-as-you-go cards. The Oyster computer will automatically give you the best fare and you will never pay more than the price of a one-day travelcard for the zones in which you travel each day. When you get to St. Pancras you can get a refund on any money you didn't spend, plus your deposit.

However, if you buy paper travelcards with the National Rail logo them at a National Rail station, you can get some some excellent 2for1 offers for popular sights in London. (Those travelcards are not sold at Heathrow so you'll have to buy them at a National Rail station in London.) For details, go here. If you want to visit any places on your full day in London for which the 2for1 offers would be good, then buy Oyster cards at Heathrow and load 20 GBP on them, but use them only on Wednesday and Friday. Buy one-day, zone 1-2 paper travelcards for Thursday.
