We have a 5 1/2 hour layover in Amsterdam, is that long enough to try to leave the airport and see some of the city?

Yup, if everything is on time. Train station is in the airport, and about 15 mins to the city.

Lyn, my advice is visit haarlem for downsized dutch fun. It is short bus run, no. 300 red bus, from skipol airport front to downtown haarlem. no mobs, yes coffee and brown too available, frans hals muesum, great church square scene, lots more. But no so crazy. Yes too amsterdam can be done? depends on levels of stress sought. Check haarlen out in rick guides; or rough guide or lonely planets. enjoy it all.

Be sure to check with your departure airline to determine how far in advance you must be at the gate. When you board the bus or tram into town divide the time you have before departure time in half and start back to the terminal at that time and assume you will be able to return in the same amount of time it takes to travel into the city center.
