Fly. Air France should be able to do it for about a hundred and a quarter, maybe a bit more.

We took the train back in our youth and it was 2 and a half days across Switzerland, Italy, Yugoslavia and Bulgaria. Two years ago we flew Turkish Airlines and paris-Istambul was four hours. Today, it's probably cheaper to fly, but you may be looking for the old adventure.

I looked at the wonderful site Rome2Rio, here. It shows a flight for $200 and 3h20m (plus, of course, time and money getting to and from airports, etc). It also shows a bus/train (mostly bus) connection costing $321 and taking over 40 hours.

If you really want to take the train, look at this page from The Man In Seat 61 (his trips start from London instead of Paris, but will give you some ideas)

Your choice. But I know that unless I intended to make several stops along the way and had a LOT of free time, I'd fly.
