We are looking at a flight to CPH that has a 1 hour, 25 min plane change. This does not seem like enough time but we are not familiar enough with the Keflavik airport.
It's been a few years for me, but we made the connection in less than 1/2 hr (both times). It's an easy airport to navigate and not large. I've not checked to see what there record is for on-time flights from US airports to Keflavik, but I've not heard many comments about missed connections there even with short time frames.

The distance is short between passport control and the gates.
I like that airport they do a good job with short layovers.
Yep, that is plenty. Last few times I've had less than an hour, with no problems except lack of time to buy a sandwich.
As someone told me, sometimes they hold the plane for you. My original schedule was 1 hr 20 min transfer, I would have had time to use the bathroom and buy some snacks and casually stroll to the gate. But we left late, we lost time in the air and then we didn't get to park at the terminal. We were bused back to the terminal, we were on the last bus so I stood there and waited for the stragglers to slowly get off the plane. My flight was leaving in 20 minutes I think. I was rethinking my choice to take this flight. ( In our destination city we had to take a train and then a bus due to construction on the train line that day and arrive before a certain time to get into our apartment so the stress was high for me.) Very long line for passport control, airpot is small, that was clear on arrival and sitting on plane as it looked for a place to park. We all agreed our luggage will be on that plane even if we don't make it. We exited passport control, board says our flight it still boarding, even though it should have already left, we run, but the gate is so close and we got on and they took off. Very late but we were on the flight. The stress for me was horrible and I say I wouldn't do it again but the price was right and it was 4 hours shorter than any other choices. Traveling from PDX doesn't give a ton of choices.

Reinforcing the previous comments, I have made connections at Keflavik on several trips. It's a compact airport that transfers large numbers of passengers in limited timeframes twice a day. My connections have been around an hour each time, but we have never missed a flight. It can be chaotic, but if you know what to expect, you will be okay.
You should anticipate that you may be transferred to/from your flights via bus as there are not enough gates to accommodate all the flights. You may not have enough time to use the restrooms or grab something to eat, so plan accordingly. There is limited seating in the waiting areas, but the staff is very efficient about processing you through immigration and boarding.
If you are flying Icelandair, I also recommend that you review the size limits for carry on bags. When we flew from Minneapolis last summer, they were asking passengers to place bags in the sizers by the counter, and if the bags were too big, the agents were tagging them to be checked.

Verifying what others have stated. Recent experience in December of flight being late, slow getting off plane onto buses and having less than 30 minutes to get through passport control and to the next gate. The worst part for us was it was unclear where to go once we got off the plane. We must have missed the signs, but I will say I think it was made worse by the long lines of other pasengers, and ended up temporarily in a line for UK departures I believe which were going through their own passport screening. Eventually we noticed a hallway where others were going that went upstairs to regular passport screening for arrivals. It didn't help that we were so short on time though either (quite panicked). But ultimately they held the plane because there were about 10 of us on the last bus to that plane and departure was about 15 minutes late.
Someone else had a question about carry-on size from Minneapolis (Dawn I think). At the gate ALL bags were weighed and put into the sizer. Mine was a normal carry-on - maybe just a tad overstuffed ;) - but too big and they kindly gate checked through to final destination for no charge. My traveling partner had smaller carry-on and it fit just fine. I don't have measurements for you but hers was closer to the International size carry-on requirement which is what Iceland's requirement is. If I get the measurements I will PM them and/or post in another forum. We were glad they were gate checked and we did the same thing on the way back voluntarily (no checks) because the planes from MSP are usually packed FULL, so it's one less thing to worry about.
It has always been fairly easy to do, even with the short layover. Have done this route/short layover about 5 times now and will be going again in 6 weeks. Will let you know how it was.
Just returned from my round trip from Frankfurt to Sacramento. Iceland airport was even easier than the last time. Passport control coming back from Seattle took about 5 min. Found my next gate, bought a coffee and a muffin, used the WC and was ready to board my next flight to Frankfurt.
For sure once you have done KEF a couple of times you understand it and appreciate it keeps you moving
You got more than enough time. Keflavik airport is small and they hold connecting planes until all passengers get through passport control.
Your luggage may not make it though.
Having worked at O'hare Terminal 5 for Virgin Atlantic as a pax agent processing lost luggage claims for flights connected through London Heathrow I am exclusively a carry on bag traveler anyway.
