The neo-Gothic cathedral (Dom) is a top attraction. Rick has written 15 pages in his book that answers your questions--have you seen that writeup (pages 290 - 305 of 2007 edition)?
I'd also plan a day trip to Bonn to visit the historical old town including Beethoven's house and the several palaces there are. It's an easy 30mins or so S-Bahn ride from Cologne. Also Cologne is a night life city and has a very unique kind of local beer called Kölsch.
