How can I best utilize my eurail German pass from Frankfurt or Nuernbert to as far North in Germany, and buy a ticket from the last point in Germany to Copenhagen?

See the timetables at www.bahn.de to get routes and times. Enter Kobenhavn rather than Copenhagen. After you get summary timetables, click on the arrow to the left of each departure time to see the connecting points. After you've decided on a route and departure time, go to the station in either Frankfurt or Nuernberg and buy a ticket for the train of your choice from its last point in Germany to Copenhagen.

If you take the direct train from Hamburg to Copenhagen, the train is shunted onto the ferry at Puttgarden for the Puttgarden-Rødby ferry crossing. The border point is in the middle of the sea, and for this reason there exists a fictious station point representing the middle of the ferry crossing for fare calculation reasons. You ticket should then read Puttgarden MS (or Puttgarden Mitte See) to Koebenhavn H.
If you take the night train from Amsterdam/Cologne/Basel/Munich directly to Copenhagen, the train passes through Jutland and crosses the Great Belt bridge, not the ferry. Here, the last border point is called Flensburg Gr. or Flensburg Grense, meaning Flensburg border.
