We travel from San Francisco to Florence in two weeks with a connection at CDG. Do we just go through a security check at CDG as we move from Terminal 2E to 2F - showing our passports - or is something more required?
You go through passport control entering France because that's your entry into the Schengen zone. Then you walk from terminal 2E to terminal 2F, and go back through security to reach your gate. You'll need plenty of time. Once I changed at CDG between E and F going from Nice to Dublin. Gate to gate with no passport control took about 50 minutes hustling it.
In Oct 2014 I flew from San Francisco to Rome through CDG. Landed in Terminal 2E gate M area, went through Passport Control, headed to Terminal 2F, ran my carryon through the x-ray machine and proceeded to my gate. Terminal 2F has two levels, the upper level are shops, ATMs & the gates w/their seating areas and in the center portion below you can find, more shops, eating areas and restrooms. https://www.youtube.com/watch?v=sIgwPT5lNFk.

Enjoy your trip, Im heading back to Paris at the end of the month.
Added: My luggage was booked all the way through to Rome, I was on Air France all the way. Hopefully you are on the same carrier to the end. If not, I believe you will have to retrieve your luggage and re-check in.
I will do the opposite - go from 2F to 2E. My travel agent said a security check is only required if we leave the "international terminal." I assume she was referring to Terminal 2. Did she give me the wrong information? Where do I go after exiting the jetway?
Traveling Woman - yes, your travel agent gave you the wrong information. But don't worry - they won't let you get lost. Just follow the signs and the crowds.
As said above, since Paris is your entry into the Schengen zone, you have to go through passport control there. You checked bags will be checked through to your final destination - you won't see them in Paris. You then make your way to your new terminal; on the way, there will be a security check.
New terminal? I thought 2F and 2E means both planes are in the same terminal.
Here are links to the map of CDG and it's terminals. Terminal 2 is one big complex with seven separate buildings.

You can download separate maps of each of the terminals in the 2 complex.
editing to add - oops see others added the map as well.
Interesting - there is no 2B. Why is that?
I am sure everyone wishes Terminal 2 was one big building with a totally different floor plan.
There is a 2B - look across from 2A on the map.
