I see lots of flights out of Florence, Italy for ~7am. Is this feasible? Seems like transportation may be tough. Can you help? thanks!

The Amerigo Vespucci airport (Florence) is not a large airport. Smaller than Venice and tiny compared to Rome. You won't have as much difficulty getting through security. Plus, I'm betting that you will just be flying to another EU city to pick up your flight home. The local EU flights don't involve as much security as the flights out of the EU.
As with Venice and Rome, your hotel should be able to have an early taxi waiting to take you to the airport. About 25-30Euro. If you have selected your hotel, you might inqire as to their policy on having an early taxi standing by.

And.... traveling first thing in the morning should be less crazy! When I departed Venice several years ago it was CHAOS!
