we need to get from florence to livorno to get be able to board the ship/ cruise by 6:45 - anyone know the time we would have to catch from florence?

I assume you mean 6:45 p.m. (18:45). I don't know how long it takes to get from the train station to the cruise terminal, but it looks like the last possible train you could take leaves Florence at 16:28 and arrives in Livorno at 17:50. The previous train leaves at 15:28 and arrives at 16:48.
