Reviews of Ryan Air Easyjet are not the best. What other options are there even other airports, for flights to London
'Reviews of Ryan Air Easyjet are not the best.' - 'not the best' as regards what?
Not what you asked but it is a small percentage of travellers who take the time to compliment any airline on any review site.
Not what you asked but how much upset could be caused to you on a two hour and a few minutes flight.
www.whichbudget.com is one site which will give you the alternative airlines.
Here's my approach to the low-cost flights:
I pay all the extras up-front (luggage, best seat, early boarding, etc..) * IF * the flight is direct and will get me from point A to point B the fastest, exactly when I want to go... and that my plans are firm by the time I book.
By paying a bit more than just the base ticket, I usually avoid a lot of the hassles that make reviewers grumble. Also, be very aware of the conditions for the use of the tickets ahead of time - like having to print your boarding pass before arriving at the airport (or incur a penalty for getting them to do it for you).
So, if the best flight that you need from Santiago de Compostela to London is with one of these - book it.

One wonders what the Elite Flyers would do if they found it necessary to sit on a chicken crate with a couple of pigs tethered to it.
