I will be flying from the US to Edinburgh with a connection at Paris-De Gaulle, France(CDG). Would I have to do customs in Paris or Edinburgh or both? I believe it is a 2 hr layover in Paris.

You're welcome two hours should me more than enough time. You'll probably have to go through a security check at CDG before you board your connecting flight.
