Take the IC train from Bruges to Brussels Midi Station. From Brussels to Paris transfer to the high-speed Thalys train. The IC train doesn't need any advance reservation, just purchase your tickets at the station on the day of your journey. For the Thalys train you get the cheapest fares by booking way in advance via http://www.thalys.com
Total travel time is between 2.5 to 3 hours depending on which departure you choose.
I just booked the exact opposite of this route last night -- Paris to Brugge by train (connecting in Brussels).
I looked around high and low and found (by far) the best rate on the Belgian rail website.
It was EUR35 per person, which was way better than I found in other places.
Total time is about 2.5 hours -- I'd call that pretty fast.
There is little in France and Belgium to compare to the long-distance bus services you get in the UK: what little there is you can check through the Eurolines website at www.eurolines.com.
Another option is to take a train from Bruges to Lille and then the TGV to Paris. I think it was an IC train but don't remember.
We did this 2 years ago and it worked fine. Our original desire was to take Thalys to Paris but this was much cheaper for us.
