I'm trying to set a fare alert for next summer but I don't see the multi-city option on either Skyscanner or Trip Advisor. Any recommendations for another app or website ?? Thanks.

Skyscanner never used to have a multi-city option but I do see it there now. I also see that option on Trip Advisor. Not sure why you don't see those. If you're searching on a mobile device that might be the reason you don't see it. I just search on my laptop.

I've never seen a fare alert option for a multi-city trip, so what you have to do is set up round trip alerts to both points (e.g., Chicago to Paris and Chicago to Barcelona).
If you're trying to look at multi-city flights on your phone, I find the Kayak app very easy to use; it includes the multi-city option on the initial screens.
