The Eurostar does not stop in Dover. Your closest Eurostar station is Ashford, but departure times are limited (three/day). You'll have many more choices if you depart from London.
You could take a ferry from Dover to Calais and a train (or trains, if a connection is required in Lille) from there to Paris. See the timetables at www.bahn.de. Click on the drop-down flag menu for English. After you get summary timetables for Calais-Paris, click on the arrow to the left of each departure time to see the connecting points, if any.

If you are in Dover do NOT miss Dover Castle and fortifications as well as the secret underground tunnels that were constructed in the middle ages and expanded for use during WW I & II.
